Arnaud Bignon is born on 5th of January 1974 in Le Mans (France).

He make his first steps in the kitchen with his grandmother Henriette, but the irreplaceable time for him was with his grandfather Albert in the garden learning to be in harmony with the seasonality.

Arnaud complete a BEP and a Bac pro apprenticeship in 1993 and moves to Paris to start his career at the restaurant Drouant ** with Louis Grondard and Yannick Alleno as chef de partie.

In 1998 at the restaurant Montparnasse 25* he meet the Master of cheese Mr Poulard that was proposing to the guest more than 150 different cheese on the trolley.

After Alain Ducasse restaurant *** Poincare Avenue he moves to the Palace Hotel Le Bristol on the side of his mentor Eric Frechon as sous chef.

October 2005 Arnaud took over the restaurant Spondi in Athens (Greece) as Head chef and in 2008 the restaurant was awarded 2 Michelin stars. He becomes one of the youngest chef to obtain this distinction.

From 2012 he moves to London to the Greenhouse restaurant and less than 1 year after the restaurant received the second Michelin star.

In 2018 he start a new challenge back in Greece as General Director of Spondi restaurant and consultant for Trastelis group.
